Spend an evening immersed in one remarkable root, from soil to shelf to self. In this hands-on class, we’ll trace the full arc of herbal medicine-making with elecampane (Inula helenium) — a warming, aromatic root long used for respiratory and digestive support.
We’ll begin at the source: OPTIONAL: students have the option to meet at the instructor’s home at 4:30pm (address will be provided to registered participants) to dig elecampane straight from the earth; getting to know the plant’s growth habit, root structure, and harvesting technique firsthand.
From there, we’ll head to Sweet Willow’s commercial kitchen, where the real transformation begins. You’ll learn to prepare the same root four distinct ways:
Tincture — extracting elecampane’s medicinal compounds in alcohol for a concentrated, shelf-stable remedy
Syrup — a soothing, kid-friendly preparation ideal for respiratory support
Oxymel — the ancient honey-and-vinegar method, prized for its balance of sweet and sour medicine
Vinegar — a mineral-rich extraction that highlights elecampane’s digestive-supportive qualities
Along the way, we’ll talk through the “why” behind each method — how menstruum choice (alcohol, honey, vinegar) changes what’s extracted, how each preparation is best used, and how to store and dose what you make. You’ll leave with bottles of all four preparations, the knowledge to recreate them at home, and a genuine, rooted relationship with one plant learned inside and out.
